Our Fun on Easter Weekend

We had lots of fun yesterday. Aunt Kelly, Uncle Matt, Paw Paw, Hillary and Jolie came over and we hunted Easter eggs. Here are a few pics.

Our Fabulous Day!

So the Kids finally went back to preschool today. AHHH! 5 Full Hours of sewing time to myself. 2 hours of which I spent looking for a lost bobbin, but oh well. 5 nice quiet hours of peaceful bliss. Then the kids get home and Auntie comes over with Jolie. We had plans to sit out in the driveway and paint but it was raining. So we painted on the back porch...that leaked.

Needless to say, ben was of course the first one that lost interest and wanted to run inside with paint all over him and touch the walls...before I got my camera...so he is not in the pictures. And here are the masterpieces! They are painted on 8X10 Canvases.

And here was dinner last night. Hubby's with Chicken and Mine with Shrimp. Everyone loved it. The noodles are actually supposed to be tossed with the pesto sauce but it was so strong when I made it that I didn't want to go overboard since I already marinated the meat in it. But next time I will definitely add the pesto sauce to the noodles.
Asian Pesto Noodles w/ Chicken and Shrimp



And for those who want the recipe for the pesto sauce:

3 cups fresh mint leaves

3 cups fresh basil leaves

3 cups fresh cilantro leaves

3/4 peanut oil

3 tbsp sugar

2 to 3 tbsp lime juice

5 cloves garlic, chopped

2 tsp fish sauce or 1 tsp salt

1 serrano pepper, finely chopped


Recipe calls for soba noodles but I used whole wheat spaghetti noodles.

1. Marinate meat in 3/4 cup pesto.

2. Cook noodles.

3. If using shrimp, put on skewers. Broil about 3 minutes on each side

4. To serve, toss noodles with remaining pesto sauce. Serve with Shrimp skewers.


Ahhh! Tonite's dinner.

Chicken Pomodoro!

Sevings: 4

Prepartion Time: 30 minutes


4 portions spaghetti

2 egg whites

4 tsp Mrs. Dash Tomato Basil Garlic Seasoning

1/4 cup reduced-fat parmesean cheese, grated

4 portions chicken breast (1 lb)

2 tbsp olive oil

3 tomatoes, diced (or 1 15-oz can)

1 green bell pepper

1 yellow bell pepper

3/4 tsp Italian seasoning

4 Tbsp red wine (or chicken broth)


1. perpare spaghetti

2. lightly beat eggs. In a pie plate, mix Mrs Dash seasoning and parmesean.

3. Dip Chicken in egg whites, then into the seasoned parmesean, coating both sides.

4. Heat olive oil over medium heat. PLace chicken breasts in skillet. cover and cook aprox 6 minutes on each side. Transfer to plate and cover with foil to keep warm.

5. Add tomatoes and peppers to skillet and saute over medium heat until peppers begin to soften. Add Italian seasoning and wine, cont to cook for 2 minutes.

6. Add pasta to the skillet and mix gently.

7. Slice chicken and place on top of pasta mixture.

Zesty Italian Chicken

This was dinner one day last week and was super good. If my 2 yr old son ate all his, you know you'll like it. So try it tonight!




Servings: 2


Preparation Time: 50 minutes


2 portions chicken breast (about 1/2 lb)
1/4 cup fat free italian dressing
2 portions fettuccine (about 4 oz uncooked)
1 cup low fat pasta sauce
2 cups baby spinach leaves
2 tbsp reduced fat parmesean cheese, grated

1. marinate chicken in italian dressing for at least 3o minutes.
2. preheat grill to high. Prepare fettuccine.
3. Grill chicken and cook for about 6 minutes on each side.
4. In small saucepan, warm pasta sauce over medium heat.
5. divide spinach leaves between two separate plates. Layer portions of warm fettuccine and grilled chicken breasts over spinach leaves.
6. Top with pasta sauce and parmesean cheese, serve and enjoy!

Note: I absolutely do not like italian dressing or any dressing other than ranch and this was by far delicious.

Miracle of the Day
Survival of Window Washer Who Fell 47 Stories
Dr. Philip Barie of N.Y. Weill Cornell Medical Center was quoted on the news Jan 5 saying:"If you are a believer in miracles, this would be one," said . "I'm not a deeply religious person personally, but when I … I can understand what the religious people mean about a case like this."
Doctors are calling the survival of window washer Alcides Moreno, who fell 47-stories on December 7, a miracle.

Asked how her husband was responding, Alcides' wife Rosario Moreno, said: "My husband's very religious. He believes that when it's time for you to go, you just go."


Too many people die with a "whoops" on their tounge. Or worse ... a swear word is their last word.
May our last word be "God". That one word prayer, in the Bible, kept Peter from falling when he walked over to Jesus, on the water of the sea.

Bible Story

The wind was still whipping, the sea was still tossing their boat this way and that, when one of the disciples happened to look out into the night.

There was a man walking on the water!!!

In the dark of the night they saw a man coming towards them on the water - They heard a voice say, “Take courage! Don’t be afraid. It is me!”
It was Jesus! “Lord, is it really you?” Peter said, holding his hand over his eyes to block the spray of the splashing waves. Peter was a brave man! Or he was crazy?!? “If it really IS you, tell me to come out to you on the water!”
Jesus said, “Come.” Peter stuck one leg out over the side of the boat and set his foot on the water. It didn’t sink in! He stepped out with his other foot, and it didn’t sink. He stood up. He was standing on the water! He took one step, and then another, and then another. He was walking on the water, just like Jesus! He might have even been thinking to himself, “Hey! Look at me. I am walking on the water! Aren’t I great!”
But wait a minute. People can’t walk on water. And then Peter started to look around him. All of a sudden, the boat seemed awfully small and far away. There was nothing but black, churning water all around him. The waves were lapping at his feet, water was stinging his eyes. And then, just like that, the water under his feet let go. “Help me, Lord!” Peter gulped, slipping into the cold water. “Save me!” But before the water could gulp Peter down entirely, Jesus reached down with strong hand and grabbed him by the arm, saying: “Oh you of little faith, why did you doubt?”; and Peter returned to walking on the surface of the lake, dripping wet, back to the boat. Just as they were climbing over the side of the boat, the wind died away and the sea turned smooth as glass. Everything was suddenly peaceful and quiet. One minute the wind was roaring and the sea was crashing, the next all was peaceful and calm. Some of the disciples must have remembered just then the bible verse from Psalms they learned in Hebrew school... “Then they cried out to the Lord in their trouble, and he brought them out of their distress. He stilled the storm to a whisper, the waves of the sea were hushed.”

Kaylee is Fabulous 4 yrs old!

4 yrs ago I had no idea what lay ahead of me.
This was at my baby shower 2 weeks before I was due.

And this is after 14 hours of the hardest back labor ever, 12 of those with no pain medicine whatsoever, ready to push her out.

And my beautiful princess finally arrived!

She is 2 months old here.


This is for a clock I made for my mom for Christmas. Every picture is of when she was 1 mo, 2 mo etc.This is her first Christmas! That's my aunt Connie next to me. And yes I'm 5 months pregnant with Ben.

We took Kaylee to the Houston Zoo for her birthday. It was beyond freezing, our toes were like ice but they had a blast.
This is a picture of me and her by the bird island area. I stayed up until 2 in the morning to finish her dress for her birthday. And everyone has loved it. I need to get better pictures but I love it because it has penguins and it's more like a winter dress instead of Christmas so she can still wear it after Christmas.

This is the Bald Eagle that was in no cage or glass, I could have reached out and touched him. Crazy. And he was posing so nice for me.

We stopped at Benningan's on the way home to eat and they served her Birthday Brownie with Ice Cream.
And this is what she got for her birthday. She LOVES IT!
